i was just wondering if closing a gripp for a long time (30 secs - 1 min) will help grip/improve grip, so would it?

Yes it will increase strength it will also help you in grip contest where you have to hold a coin between the handles of a gripper for time.

Strength-endurance, yes. The time (30+ sec.) is too long for max strength; <10 sec and max effort is better. What is your goal?
