2"x5" vs 3"x4" Saxon Bar

Probably depends on personal preference. 

The only pinch devices I’ve used are 2”, 3” and 4” Napalms Nightmare blocks.

3” is my favorite, 2” is definitely my least favorite. I’d go 3”x4” all day

I second this. It has to do with what the right size for your hand is. For the most part 2" is on the side of "narrow pinch" and 3" is on the side of "wide pinch". @Squeezus wrote a great article called "The Glaring Gap in your Grip Strength" that goes into more detail about different pinch widths. 

Otherwise, take a look at how you're likely to compete in the future. I think that 3" Saxon bar is pretty common in Armlifting USA competitions, but 2" Saxon bar has been popping up more as well recently (e.g. SW Regionals 2020, Pinch Grip Games 2020).

I have made saxons in the past where the center 18" is 2.5" x 5" for sumo and the outside aspect is 2"x5" so you have two widths to train with. A small upcharge compared to normal cost but not a lot.
