I was wondering, when bending steel above a thickness of let,s say 1 cm, are you using your upper-leg to make a start and then DO/DU?

I think that question has two answers: the first is no. If you are doing a strict DO/DU bend, you start and finish it unbraced however big or small the steel is. The second is if you don't care about being strict, you can start the bend however and finish it however. For instance, if you wanted to, you could start a horseshoe on your leg and finish it DO. So the answer depends on whether you are doing a strict bend or just whatever the heck you feel like doing that day.
