John Beatty Posted October 17, 2006 Share Posted October 17, 2006 Started the first batch of meat cooking, it's a 2 stage process, first can be done in advance then frozen or refrigerated for a bit. 18lbs of brisket in the oven. plus a 3lb pork picnic roast. have 4 pork tenderloins (6lbs) to go. Will have a vat of baked beans, potato salad, macaroni salad, hash brown casserole, and 2-3 of Big Tony Scrivens' cheesecakes. Plus beer. No fee for spectators, but the food is for the guys competing unless we have extra (& the food was mopped up last year completely). Josh and Ben are correct about the food.John is a Top Gun chef.
